I’ve been to many weddings in my 29 years, but I couldn’t tell you what was served for dinner at most of them. Last spring I went to a good friend’s outdoor barn wedding. Among many fabulous details, the couple rented food trucks for dinner. Guests had the choice between a taco truck and a grilled cheese truck for dinner, with ice cream and pie for dessert. The entire evening was very them, not to mention memorable. We wanted our reception to not only be fun for our guests, but also us.
Appetizers:: Since we didn’t have any catering guarantees with the venue, we had a lot of freedom for fun food and drinks. Since many of our guests weren’t from Minnesota, I wanted to introduce them to some of my favorite things from the state. One of those happens to be fried cheese curds, which are everywhere at the Minnesota State Fair. My cousins and siblings helped serve them, and explained to our guests that they taste far better than they sound.
Drinks:: When guests first arrived at the reception, my aunt and uncle were serving margaritas (complete with sombreros). It was one of the things we got the greatest feedback on, and the most popular drink of the night. We also had punch, water, wine, beer, and Coke Zero (the groom’s favorite).
Dinner:: We had Chipotle catered for the main meal, which was a huge hit. It is one of our favorite restaurants, and something I wanted to share with our friends and family- many of whom had never had it before. I’ve never been much for chicken and steak at weddings, and hope this will be something memorable for our guests.
Dessert:: Instead of a large wedding cake, we had 12 tiny cakes. There were many different kinds and flavors, and after one was served to each table, we encouraged guests to get up and find their favorite. It was a fun way to get people to mingle, and I enjoyed making 12 tiny cake toppers.
